This matcha granola is naturally sweetened with ripe bananas (make sure it's extra spotty and ripe for maximum sweetness!) and just a splash of maple syrup, so it feels indulgent without being overly sweet.

Ingredients

1 ripe banana, mashed

60ml melted coconut oil

60ml maple syrup

½ tsp ground cinnamon

120g gluten-free milled oats

20g dessicated coconut

60g chopped walnuts

60g whole buckwheat

40g black sesame seeds

½ tbsp grated orange zest

Directions
Preheat the oven to 170°C. In a large bowl, mix the mashed banana, coconut oil, maple syrup, and cinnamon until smooth.
Stir in the oats, coconut, walnuts, and buckwheat until well combined. Spread the mixture evenly on a lined baking tray.
Bake for 40 minutes, checking and stirring every 10 minutes to prevent burning. Once golden and crisp, remove from the oven and allow to cool.
Stir in the orange zest, matcha powder and sesame seeds. Store in an airtight jar or freeze in a ziplock bag.
