When it comes to desserts, matcha has a way of making everything feel a little more special. These Matcha Cookies and Ice Cream treats, dipped in a creamy matcha white chocolate coating, are a dreamy combination of earthy, sweet, and indulgent. One of our all time faves!
Matcha Ice Cream Cookie Sandwich

These indulgent cookie sandwiches bring together the earthy subtlety of OMGTea Organic Matcha Tea AAA with the smoothness of vanilla ice cream, encased within homemade plant based matcha cookies.
Whether you enjoy them immediately or store them in the freezer for a sweet surprise later, these decadent treats are sure to become a beloved addition to your dessert repertoire.
Ingredients

110g vegan butter

200g fine caster sugar

6 tbsp plant milk
- pinch of vanilla powder

½ tsp baking powder
- pinch of bicarbonate of soda
- 250g all purpose flour
- pinch of salt
- 1 heaped tbsp OMGTEA matcha powder
- 1 280g bar white chocolate
- 7 large scoops vanilla ice cream
- 1 tsp OMGTEA Matcha powder

Directions
Preheat the oven to 180ºC
Add the butter & sugar to a large mixing bowl and mix together using an electric hand whisk.
- Once incorporated, add the remaining cookie ingredients and whisk until combined.
- Line a large baking tray with some greaseproof paper. Using a small sized ice cream scoop, divide into 14 balls, then roll them in your hand for a few seconds to make them into a nicely rounded smooth ball, and place back onto the baking tray, spreading them out evenly with space between them.
Put in the oven for 10 minutes
- Once the cookies are ready, remove them from the oven and allow to cool completely.
- Meanwhile, melt the chocolate in a bowl over a simmering pan of water, stirring occasionally.
- Add 1 tsp OMGTEA matcha powder to the melted white chocolate, sifting the matcha powder through a mini sieve, then stir to combine.
- Add 1 scoop of ice cream between 2 cookies, then dip the matcha ice cream sandwich slightly into the melted matcha chocolate, put onto a plate lined with baking paper, and straight into the freezer for the chocolate to set for around 15 minutes.
- Remove from the freezer and eat straight away, or leave in a sealed container in the freezer for those times when you feel like a sweet treat!
