Marbled Matcha Banana Bread

Ingredients

75ml melted dairy-free butter

4 large bananas

100g + 3 tbsp caster sugar

200ml dairy-free milk

300g plain flour, sieved

3 tsp baking powder

Pinch salt

2 tsp matcha, sieved
Directions
Preheat the oven to 200c (180c fan), line a 900g loaf tin with baking paper.
Peel 3 of the bananas and mash them in a mixing bowl.
Add the melted butter, milk and sugar.
Add in the flour, baking powder and salt and mix everything together until combined.
Split into 2 bowls, add the sieved matcha to one of the bowls and mix again.
Add spoonfuls of the different batters to the baking tin to create the marble effect and run a cocktail stick through it to marble further.
Cut the 4th banana longways and place onto the top of the batter. Sprinkle the extra sugar on top, this will caramelise the banana.
Place into the oven for 50 minutes, insert a skewer into the banana bread to check that it’s cooked, leave in the oven for a further 5 minutes if needed. Leave to cool completely before slicing up and enjoying.
