Ingredients

Cake layer

400g sponge cake, cut into cubes

Chia Cherry Jam Layer

For 250g fresh or frozen cherries
- 2 tbsp chia seeds
- 2 tbsp maple syrup (optional)

Custard Layer
- 1000ml milk (dairy or plant-based)
- 3 tbsp custard powder
- 2 tbsp sugar or sweetener of choice

Matcha Whipped Cream Layer
- 500ml heavy whipping cream (or coconut cream for vegan)
- 1 tsp OMG Matcha Tea Powder
- 2 tbsp powdered sugar or sweetener
Directions
In a saucepan, cook cherries over medium heat until soft and juicy (about 5 minutes).
- Mash slightly, stir in chia seeds, and sweeten with maple syrup if desired.
- Let it cool and thicken for 10-15 minutes. Heat milk in a saucepan until warm. In a small bowl, mix custard powder and sugar with a little cold milk to make a paste.
- Stir the paste into the warm milk, whisking constantly until thickened. Let it cool completely.
- In a chilled bowl, whip cream until soft peaks form. Add matcha powder and powdered sugar, and whip until fully combined. In a classic trifle dish, layer the sponge cubes as the base.
- Spread the chia cherry jam evenly over the sponge. Pour the cooled custard over the jam layer and smooth it out. Spread the matcha whipped cream on top of the custard layer.
- Dust the top with a light sprinkle of OMG Matcha Tea Powder. Garnish with physalis fruits for a bright and elegant finish. Refrigerate the trifle for at least 2 hours to set the layers before serving. Enjoy the perfect blend of fruity, creamy, and earthy matcha flavors!
