This recipe takes the classic Tiramisu recipe and gives it a refreshing twist by incorporating OMGTea matcha through it, creating a truly special dessert! The vibrant, finely ground matcha transforms the tiramisu into a beautiful green hue and also adds a subtle earthy, rich flavour that contrasts wonderfully with the creamy layers.

3 tsp OMG Organic Matcha Grade AA

250ml warm (not boiling) water

500ml whippable plant cream

4 tbsp caster sugar

250g Amaretti biscuits
-
3 tsp OMG Organic Matcha Grade AAA + 1 tsp for dusting

1 tsp vanilla powder

50-100g strawberry jam
Directions
Add the 3 tsps of OMG Matcha Grade AA to a mixing bowl then start by adding a small amount of the warm water and combine with a bamboo matcha whisk (or a regular whisk) to dissolve the lumps. Slowly add the rest of the warm water and whisk to combine. Set aside to cool.
In another mixing bowl, add the plant cream and whisk until nice and thick.
Pour half of the whipped cream into another bowl so that you have 2 bowls of cream-1 will become a green cream and 1 will stay white.
Add 2 tbsp caster sugar to each bowl of cream (more if you would like it sweeter), along with ½tsp vanilla powder to each bowl.
Then add 3 tsp of OMG Matcha Grade AAA to one of the bowls only. Whisk all the ingredients together in this bowl, then rinse the whisk and whisk all the ingredients together in the other bowl.
Dip each of the Amaretti biscuits into the cooled matcha & water mix and cover the base of a casserole dish with as many of the soaked biscuits as will fit in one layer.
Then take the bowl of green matcha cream and dollop over the biscuits. Using a spatula, spread it evenly to cover the biscuits.
Add some ½ teaspoon dollops of strawberry jam across the top of the cream in various spaces, so that each bite will have some jam in it.
Create another layer of soaked biscuits over the top of the green matcha cream and then cover these with the white cream from the 2nd bowl, spreading evenly to cover the biscuits.
Place into the fridge for at least 1-2 hours or overnight to chill. Then using a small sieve, sprinkle the top with 1 tsp OMG Matcha Grade AAA, serve up and enjoy!
